Lemon meringue pie masterclass at Gloria, Shoreditch

I have decided this year is going to be more fun than last, particularly my alone time. I have been signing up for all sorts of new things and this weekend, I kicked it off with a lemon meringue pie masterclass. Fun!

Although this was not just any lemon meringue pie. It was Big Mamma’s very extra, lemon meringue pie.

Gloria was Big Mamma’s first London restaurant which opened in East London in 2019. After taking over the London restaurant scene with their theatrical Italian dining rooms and OTT dishes, there are now six spots scattered across the city, with the newest recently opening in Canary Wharf.

I first spotted their famous lemon meringue pies all over Instagram during lockdown. Gloria is in East London, so I was ecstatic when they finally opened a dark kitchen serving SW London. With pizza, pasta, and pie in my basket, I expected a toned down, transport friendly version to arrive so you can image my joy when the Napoli gang delivered our food, with a sheet of stickers, and a plastic pint glass with a perfectly preserved slice of their 8” pie inside.

I don’t go to east London very often but now that I can freely travel across London again, I was happy to oblige for this. The district line was doing its usual Sunday thing, so I caught a bus to Clapham and got in the northern line direct to Shoreditch. Surprisingly more convenient actually.

Starting with a cup of tea and one of their giant cocktails, (I went for alcohol free since I didn’t need to spend Sunday morning drinking alone) we took our seats (me, between two couples) in the wine room.

Chef took us through the processes for each stage from the dough to the curd and then the meringue. We were lucky to have a bit of a know it all in the group. He was asking some very detailed and complex questions, which means I know far more than the average person about the protein content of different types of flour.

Soon, the aroma of freshly baked dough filled the room, and we were each handed a pie crust as multiple vats of different mixtures appeared from the kitchen downstairs. It was time to get to work on constricting our own pies.

My favourite stage was definitely the meringue. Filling the base with zesty curd required smooth precision but when it came to the meringue, chef demonstrated, gabbing handfuls of it and pretty much dumping it on top and pressing it down to fill any air bubbles. With the texture of sticky, but slightly more stable shaving foam, I was grinning like a kid once I got stuck in.

A real glimmer of joy on a rainy Sunday morning; and that’s what we’re chasing.

Adamant that it wasn't going to be wonky, I did also enjoy taking off my gloves and returning to the world of adult, smoothing it out with the palette knife afterwards.

Once we were happy with the shape, we took to torching our pies, one at a time, in front of everyone. Probably more of a health and safety measure - giant cocktails, small room filled with wine etc! The biggest challenge of the day, however, was getting it home on the tube afterwards.

If the rest of my solo adventurers look like this, I’ll be very happy!

This class cost £25 which was amazing value for money and was an exclusive event for LOTI members. Highly recommend! I signed up a week ago and have already made very good use of it.

Sourdough masterclass with Good in Bread

I love baking. Fairy cakes, banana bread, Tuesday nights watching bake off, although the more I bake, the more apparent it becomes that I'm not particularly good at it. 

Keep it simple and I'm fine but move on to more intricate recipes like sourdough and I wouldn't know where to start.

Sourdough became the 'it' thing to eat a few years ago; avotoast has never looked back and once people realised that they were going to have alot of time on their hands last year, it became one of the 'it' things to bake.

I know it takes a very long time because I have just successfully baked (and immediately eaten) my first two loaves.

I definitely cannot take all the credit. The guys at Good in Bread sent me all the stuff I needed, a simple recipe and they even set up a Zoom call with Emily (who founded the brand) who talked me through the process step by step and let me tell you, sourdough is no easy feat.

With one step unsupervised, I did manage to burn the first loaf (it was a little extra crusty) but the 2nd was perfect and a very proud moment. I try to avoid bread at home where I can but there was no resisting a loaf that I had baked fresh myself. We had bread for breakfast, lunch and dinner for two days last week. 

Good in Bread is an artisan sourdough subscription service which means it's now possible to have a freshly baked loaf delivered to my London door step on a bi-weekly basis.

Bread Ahead Doughnut Workshop

Heading to Borough Market early on a Saturday morning is always an exciting start to the weekend but this time, we had something extra special planned for when we got there.

Bread Ahead are, hands down, my favourite doughnuts. Their raspberry jam filled ones are simple but just done perfectly. I never leave the market without one, so upon discovering that they have their very own cookery school behind the stand, I promptly booked a couple of spots in their doughnut making class.



We arrived at 10 am for the 2 hour class and along with 12 others, we were checked in and ushered to our own tables. In the interest of social distancing, they had pre weighed and distributing the ingredients and of course there was mask wearing throughout, although the kitchen was pretty cool so it wasn't too bad. 

Initially I was a little sad because we were given a ready made ball of dough but as it turns out, a good doughnut, like Rome, isn't built in a day. The dough needs to rest overnight so we used the original ball to make our doughnuts in the class - dividing it up, rolling to shape and proving - and then we made our own fresh dough which we took home to have a play with later on.


We also learnt how to make jam from scratch which is something I'm very excited to try at home - super simple and just as good as store bought which can't usually be said for anything I make in the kitchen. The second filling was a thick vanilla custard which was much less exciting and not very special at all so we quickly forgot all about that.

Once our dough balls were proved, it was time to drop them into the deep fat fryer, allowing them to achieve the all important ring of truth (that's the light ring around the middle.) Since the dough floats to the top of the hot oil, the middle doesn't get a chance to fry and instead, is steamed which leaves it super soft. This makes it the perfect place to pipe the filling into.


After two minutes on each side, they were golden delicious, with a perfect ring of truth and ready to throw into a bowl of sugar before being stuffed with the fillings. 

Albeit a little uneven, and almost bursting since I was a little eager with the jam, the doughnuts were finished to perfection, and even sweeter knowing I had made them myself (possibly because I was also a little eager with the sugar coating too)

I'd highly recommend the cookery school as a gift experience or just something fun to treat yourself to. If you are interested, be quick because the classes are currently, almost 50% off!

I did loads of cooking classes last year and although I did enjoy them, it started to get a bit samey, you know what I mean? Especially when I cant even cook in the first place! But it's been a while since I've done a good old cooking class so when an invitation to a Portuguese one to celebrate Monarch’s new flight path to Lisbon popped into my inbox earlier this week I was ready to give cooking another go and very excited to try something different!
We made pork and clam stew and then Portuguese custard tarts for dessert! Dessert over starters Every. Single. Day.

We chopped and we mixed and we burnt some custard (yes, that was my fault - sorry team) and then we all sat down to eat.
The stew was surprisingly good - I don't usually like pork but it had loads of flavour!
 I was in a huge rush to get home so I had to leave before the custard tarts were served but I did get to take one with me which made for a very enjoyable tube journey. It was still hot and so delicious, I've never had one before but I am a real fan now

Wedgewood Afternoon Tea at The Langham

Last month, The Langham launched their new afternoon tea inspired by classic Wedgwood collections, and I went along to have a little preview! I've been to The Langham for tea in the past and let me tell you, its pretty good! 
The new tea has been created by Cherish Finden who is Executive Pastry Chef at The Langham London and the loveliest lady! She was there all evening to talk us though how each dessert came to be and you can see from how to talks about each one just how passionate she is about her job.
The tea is super pretty and fun, decorated with flowers and butterflies just in time for spring! We had the perfect evening to go with it, one of those lovely bright, warm evenings in town you know? 
For me, usually the sandwiches are my favourite part of afternoon tea but I was so impressed with some of the delicious cakes that I went back for seconds! The sandwiches although, were pretty amazing with a selection of truffled duck egg brioche, Smoked salmon asparagus and rye, Cucumber with cream cheese and chives, Peppered beef pastrami with red Leicester coleslaw and Corn-fed chicken with golden sultana on carrot bread. The truffled egg was the most delicious - it was so decadent.
As for those desserts - They were all lovely but I'm just going to chat to you about my top three! Butterfly Bloom was salted caramel so obvs I was going to love that. A shortbread tower held together with caramel, decorated with white butterflies and the prettiest pattern down the sides.
The macaroon was mini but it packed a punch in the flavour department! Wild strawberry with pistachio cream hidden inside with the print on the front replicating the ‘Wedgwood Wild Strawberry’ design. 

I also really loved the ‘Hathaway Rose’ which I thought was just a pretty victoria sponge slice but as I tasted it, I was hit with refreshing lemon in the sponge with a raspberry and lime jam. It was really delicious
Of course there were scones in between and The Langham have that down to a T! The scones here are always good! Cherish has a great team behind her at the Langham and it was great to be able to meet them and give them a round of applause for the amazing food they'd created afterwards!
For the rest of the evening, we were treated to endless plates of food all washed down with champagne - I didnt ever want to leave!

I get the worst holiday blues so having got back from our cruise to be greeted with crazy rain and storms did not help - I just wanted to go to bed and stay there but no, I had to get up for work the next morning!

After a long start to the week, Wednesday night made it a little bit better thanks to a super fun evening with The School Of Wok. It's based in Covent Garden so I walked there after work, luckily that was during one of our little breaks from the downpour. 

I have done quite a few cookery class style events since I started blogging but this one was different from any cooking classes I've had before because it wasn't just a bloggers thing, it was a real life cooking class with that people had paid to come and learn. So I walked in, hung up my bag and put on my apron next to 11 people I had never met before.
Ovbiously, I went alone and so did three of the others - there were two couples and a group of 4 women too so its great for anyone. The four of us on our own started off a little shy but by the end of the night we were chatting and away!

The fact it wasn't just bloggers meant that it wasn't normal for me to be taking photos all night and tweeting every little thing that happened so I put my phone away and forgot about it completely. It was so refreshing to concentrate solely on having a good time. Of course I took a few photos but I was more than happy chatting to my new friends and getting stuck on with the cooking.
We made Vietnamese spring rolls, beef skewers and chicken Pho. After an hour of prepping, we went over to the hob to cook everything and when we returned the table had be transformed with flowers, candles and cutlery ready for us to eat. 

It was loads of fun and split into groups mean we all got to do everything! I'd love to give the spring rolls another try at home! They were my favourite part of the meal!

LIFESTYLE: Cupcakes With Baking Mad

I guess the guys at Baking Mad must have been as impressed as I was with my bread making skills because they got back in touch to see if I wanted to work on their next campaign, of course I said yes but I think this time I think I may have lost my good cook reputation. 

The theme was Vanilla. They have teamed up with Nielsen Massey and asked us to pick a recipe that included some of their vanilla products. I went for the vanilla cupcake recipe, but I still managed to mess that one up haha although I can blame Andrew for that one, it wasn't my fault that he didn't have a muffin/cupcake tray to cook them in!
I had a fun afternoon making them but lets just say, they didn't turn out like the photo haha, although they did taste quite nice!

LIFESTYLE: Baking A White Bread Loaf With Baking Mad

I was pretty scared when Baking Mad sent me a hamper full of Allinson Flour, a bread tin and yeast and asked me to make a loaf of bread. It was one of those ones that I wanted to say yes to but I was a bit worried about having to showcase my failed work on my blog after haha. 

I'd just had a meeting with Diet Coke earlier that day about their new 'Regret Nothing' campaign, encouraging women to be impulsive and do what they want to do and not to worry about it - 6 out of 10 ​women would happily ‘do things differently’ if they had their time again and I know that a bit of an extreme thing to compare making a loaf of bread to but it is a running joke that I cant cook and bread is something I have always wanted to try so I'm glad I did - and guys, prepare yourselves - you would not believe the result!

I can make bread!! It might not be all cheffy like this herb focaccia recipe but its a legit loaf of bread that looks and tastes like real bread. My mum was so amazed when I took it out of the oven that she called everyone into into the kitchen (including both my brothers and their girlfriends) to marvel at my creation.

We got my dad to slice into it and within 5 minutes the whole lots was gone, crust and all and it was so good! 

Big thanks to Baking Mad for giving me the opportunity to push my comfort zones and making the bread making process so easy for me - I will definitely be making it again!

LIFESTYLE: Healthy Cooking Class With LV

 Earlier this week, I was invited along to a cooking class at the Smart Cookery School with LV who are promoting healthy living. I've called this post "Healthy Cooking Class" although it was more like - watch your healthy dinner be made and then eat it class. In my case, I was happy to just sit and watch since I was exhausted from my first day at work - as you can see in the photo, I look pretty lively haha. Although, in my opinion there were far too many people there for everyone to get a chance to cook, it was very crowded.
We started with Prawn or Courgette Skewers, of course I went for prawn since I love them, they were big and juicy and their thai flavours came through, all the lime reminded me of last summer!
 Then we had an Asian noodle soup which was tasty, although the the dishes started off being filled to the top, piled high with noodles, and by the time they got to our end of the table there were scraps left and we ended up with half a bowl of soup with a couple of noodles floating about, again, I think there were just too many people there.
For the main we had Chicken or Chickpea curry with sticky rice. All the food tasted great so I definitely enjoyed the eating aspect!
